Chicken with Peppers in Blackbean & Garlic Sauce

Ingredients
- 4 Skinless chicken breasts, sliced
- 2 small onions
- 3 large mixed peppers (or any three of your choice)
- 100g (1 jar) BEIJING BEIJING Blackbean & Garlic Sauce
- 40 ml (8 teaspoons) light soy sauce
- teaspoon salt
- teaspoon white pepper
- 10g (2 teaspoons) sugar
- 4 teaspoons cornflour
Instructions
- In a mixing bowl add chicken, salt, white pepper, sugar and cornflour
- Mix all ingredients well
- Heat a wok or frying pan over high heat and add some vegetable oil
- When wok is hot (slightly smoking) add chicken and stir fry for 2 minutes
- Add a jar of BEIJING BEIJING Blackbean & Garlic sauce
- Add the onions and peppers
- Add the soy sauce
- Stir fry all ingredients for a further 2 minutes
- Add 250ml water and bring mixture to a boil
- Reduce heat, cover and simmer 3 minutes or until chicken is cooked
- Serve with steamed rice or egg fried noodles noodles.
- Add BEIJING BEIJING Szechuan Chilli Oil for extra spice and aroma.
