Chicken with Peppers in Blackbean and Garlic Sauce

Ingredients
  • 4 Skinless chicken breasts, sliced
  • 2 small onions
  • 3 large mixed peppers (or any three of your choice)
  • 100g (1 jar) BEIJING BEIJING Blackbean & Garlic Sauce
  • 40 ml (8 teaspoons) light soy sauce
  • teaspoon salt
  • teaspoon white pepper
  • 10g (2 teaspoons) sugar
  • 4 teaspoons cornflour
Instructions
  1. In a mixing bowl add chicken, salt, white pepper, sugar and cornflour
  2. Mix all ingredients well
  3. Heat a wok or frying pan over high heat and add some vegetable oil
  4. When wok is hot (slightly smoking) add chicken and stir fry for 2 minutes
  5. Add a jar of BEIJING BEIJING Blackbean & Garlic sauce
  6. Add the onions and peppers
  7. Add the soy sauce
  8. Stir fry all ingredients for a further 2 minutes
  9. Add 250ml water and bring mixture to a boil
  10. Reduce heat, cover and simmer 3 minutes or until chicken is cooked
  11. Serve with steamed rice or egg fried noodles noodles.
  12. Add BEIJING BEIJING Szechuan Chilli Oil for extra spice and aroma.
